Baked Parmesan Zucchini Fries

Crispy, crunchy zucchini fries flavoured with Parmesan cheese and herbs are seriously delicious! These fries are baked in the oven, making them a healthier recipe and the perfect snack or side for your meal! My husband who doesn't like zucchini requests I make these again!




Ingredients

2 medium zucchini, cut into spears

1 cup panko breadcrumbs

1/2 cup flour

2 eggs, whisked

1/2 cup Parmesan cheese

1/4 teaspoon paprika

1/4 teaspoon onion powder

1/2 teaspoon dry oregano

1/4 teaspoon dry basil

1/2 teaspoon salt

1/4 teaspoon pepper


Directions

1. Preheat oven to 425F and line a baking sheet with parchment paper or lightly spray a nonstick cooking rack with oil.

2. Mix panko breadcrumbs, Parmesan cheese, onion powder, paprika, oregano, basil salt and pepper in a bowl.

3. In a separate bowl, place flour. In a third bowl, place whisked eggs.

4. Dip each zucchini spear in the flour first, then the egg, and finally in the breadcrumb mixture. Place breaded zucchini on the metal rack.

5. Bake for about 15 minutes, until golden brown.
