These chicken strips are quick and easy to make, making them a great weeknight meal idea! They come out juicy and full of flavour and are healthier than deep frying. Definitely better than anything you can find in the frozen section of a supermarket!

Serves 4

Ingredients

4 chicken cutlets, cut into 3 strips each

1 cup milk

2 tablespoons lemon juice

1 cup flour

1 cup panko crumbs

1 teaspoon salt

1 teaspoon paprika

1/2 teaspoon pepper

1/4 cup oil

Directions

1. In a large bowl, mix milk and lemon juice. Place chicken in the bowl and mix to coat. Cover bowl with plastic wrap and place in fridge. Allow to marinate for at least 20 minutes.

2. Preheat oven to 400F.

3. Mix flour, panko crumbs, salt, paprika and pepper in a large ziploc bag. Place chicken strips one at a time in the bag and shake to coat. Place breaded chicken strips on baking pan lined with parchment paper, drizzling with olive oil on both sides.

4. Return pan to oven and bake for 12 minutes. Flip chicken strips and then bake for an additional 12 minutes or until chicken is cooked through.
