Summer Quinoa Salad

This simple salad makes for a refreshing side dish. Perfect for your next potluck or as a side dish for your next barbecue! You can make it ahead and store in the refrigerator for up to 2 days for ideal freshness.




2 cups quinoa, cooked and cooled

1/2 cucumber

1/2 red bell pepper

1 green onion


1. Chop cucumber, red pepper and green onion into small pieces.

2. Add the vegetables and quinoa to a bowl. Drizzle on Cilantro Lime Dressing. Toss together.
