This mac and cheese recipe is made healthier by adding a significant serving of vegetables and chickpeas for added nutrients and protein! Satisfy that comfort food craving but keep the guilt at bay with the addition of healthy ingredients.
Ingredients
2 cups pasta of choice (elbow macaroni, ditali, shells, etc)
1 can chickpeas
1 zucchini, chopped into bit sized pieces
1 red pepper, chopped into bite sized pieces
1 small bunch spinach, chopped
4 tablespoons butter
4 tablespoons flour
2 1/2 cups milk
2 cups white cheddar, yellow cheddar, or your favourite cheese blend
1/4 teaspoon paprika
salt and pepper to taste
Directions
1. Bring a large pot of salted water to a boil. Add the pasta, chickpeas and chopped vegetables and boil until pasta is al dente. Drain.
2. Meanwhile, melt butter in a saucepan over medium heat and add the flour. Whisk together to create a roux. Add the milk and continue whisking. Add the cheese and paprika and continue stirring until sauce thickens. Add the pasta, chickpeas and vegetables and stir together. Salt and pepper to taste.
