A simple Fall(ish) salad to serve with dinner tonight! Apple, Beet and Corn Salad is served with a yummy Maple Apple Cider Vinaigrette to give this salad some Fall flavour!
Ingredients
Salad
5 cups mixed salad greens
1 apple, sliced
1/2 cup beets, boiled until tender and chopped
1/4 cup corn kernels
1/4 cup marinated onions (or freshly sliced onion)
2 tablespoons chopped pecans
1/4 cup goat cheese, crumbled
Maple Apple Cider Vinaigrette
1/4 cup olive oil
1/4 cup maple syrup
3 tablespoons apple cider vinegar
1 tablespoon dijon mustard
salt and pepper to taste
Directions
1. Place all the salad ingredients in a large bowl, except the goat cheese.
2. In a jar with a secure lid, add all the ingredients for the vinaigrette and secure lid. Shake to combine.
3. Pour dressing over salad and toss to combine. Top with crumbled goat cheese.
