Ingredients
5-6 yellow or russet potatoes
2 tablespoons olive oil
2 teaspoons onion powder
1 1/2 teaspoon paprika
1 teaspoon salt
1 teaspoon thyme
pepper to taste
Directions
1. Preheat oven to 425F. Line a baking sheet with parchment paper.
2. Chop potatoes into 3/4" inch cubes and place in a bowl. Add oil and seasoning and toss to combine.
3. Spread potatoes onto a baking sheet and bake for 35 minutes or until they are easily pierced with a fork.
