Bruschetta Egg Sandwiches

Recipe makes 2 sandwiches


Ingredients

1/2 french baguette, sliced in half, each piece sliced in half lengthwise to make a sandwich

1/4 teaspoon olive oil

2 slices mozzarella

4 eggs, scrambled


To make the bruschetta topping, mix the following in a bowl:

1 large tomato, seeds removed and finely diced

1 tablespoons fresh basil, thinly sliced

1 tablespoons onion, finely diced

1 teaspoon olive oil, divided

1 teaspoon balsamic vinegar

salt and pepper



Directions

1. Place 1/4 teaspoon olive oil in a bowl. Slice Brush olive oil on the insides of each baguette slice. Heat up a grill pan and grill bread slices until nicely toasted on both sides.

2. To assemble the sandwich, add a slice of mozzarella to the bottom half of each sandwich, spoon bruschetta topping on top and place half of the scrambled eggs on top of that. Top with the other half of the baguette slice to complete the sandwich. Enjoy!
