Bruschetta Toast with Jammy Eggs

Such a simple, but delicious and healthy breakfast to start you off on the right foot! The fresh tomatoes and basil are tossed with olive oil and balsamic vinegar and then topped with a perfectly soft egg! Does anyone else get excited when they see a runny yolk?




Ingredients

1 toast

1/2 cup tomatoes, chopped

1-2 tablespoons fresh basil, chopped

1/2 tablespoon olive oil

1 teaspoon balsamic vinegar

1 egg

salt and pepper to taste


Directions

1. Bring a pot of water of water to a boil. Lower heat and add the egg. Cook at a gentle boil for 6 1/2 minutes. Transfer to an ice bath.

2. Meanwhile, in a bowl, toss the tomatoes and basil with olive oil and balsamic vinegar. Salt and pepper to taste. Top toast with the tomatoes.

3. Peel egg and cut in half. Place on top of toast. Season to taste.
