Cherry Tomato Frittata

Cheese, eggs and perfect little cherry tomatoes come together to make a delicious, healthy breakfast! Easy to make and quick too, this recipe makes for an easy addition to your breakfast table!





Ingredients

2-3 cups cherry tomatoes

1 tablespoon olive oil

5 eggs

2 tablespoons Parmesan cheese

1/4 cup mozzarella cheese, shredded

1 tablespoon fresh basil, finely sliced

salt and pepper


Directions

1. Preheat oven to 375F. In a bowl, add eggs, cheeses, basil, salt and pepper. Whisk together.

2. Heat olive oil in an oven-safe skillet over medium heat. Add the cherry tomatoes and stir for 1 minute. Add the egg and cheese mixture. Let cook on medium heat until the edges begin to set (about 4-5 minutes). Place skillet in the oven and cook for approximately 7 minutes or until the frittata has set. Remove from the oven and let cool a few minutes before slicing and serving.
