Creamy Coconut Turmeric Shrimp

Have a delicious, comforting meal on the table in less than half hour! This meal comes together quickly and uses ingredients that are good for you. Turmeric has a number of health benefits and is a frequently used spice in our house! This dish is creamy and good for you! Enjoy!




Ingredients

1 can coconut milk

2 teaspoons turmeric powder

1/2 teaspoon salt

1/2 teaspoon cayenne pepper (adjust to your tastes)

1 lb large shrimp

1 tablespoon cornstarch


Directions

Warm a large saute pan over medium heat and add coconut milk, turmeric powder, salt and cayenne pepper to a large saute pan. Add shrimp and simmer until shrimp is cooked through. To thicken sauce, add cornstarch and 1/4 cup water in a bowl. Stir to create a slurry and to the sauce in the saute pan. Stir and simmer until sauce thickens. Serve over rice.
