Creamy Vegetable and Tortellini Soup

This super easy and quick soup recipe makes the perfect cozy weeknight meal to warm you up on a cold night! I love to cook with fresh, seasonal ingredients but lets be real; life gets hectic and sometimes you just can't find the time to make it happen! Frozen veggies and tortellini are the heroes for this comforting soup and there's nothing wrong with that!





Ingredients

4 cups vegetable or chicken broth

1 sausage, cooked and sliced into bite sized pieces (optional)

3 cups frozen veggie mix (carrots, corn, peas)

400g frozen tortellini

1 teaspoon dry basil

1 tablespoon parsley, chopped

2 cups milk

2 tablespoons cornstarch

salt and pepper

2 cups spinach, chopped (optional)



Directions

1. Bring broth to a boil and add frozen vegetables, tortellini, and basil. If adding sausage, add it now as well. Cook until tortellini is cooked through.

2. Stir cornstarch into milk and add to the soup. Add spinach, if desired and parsley and stir until soup thickens. Season with salt and pepper to taste.
