Grilled Cheese with Peach, Spinach, Prosciutto and Mint Pesto

This 'adult' grilled cheese sandwich has all the classic melty cheese you want from this classic comfort food but is elevated with the addition of prosciutto, sweet peaches, spinach and a fresh mint pesto! Enjoy this delicious classic while still getting some much needed nutrients from fresh fruits and veggies!





Ingredients

2 slices of bread

2 slices of Gouda, Havarti, or your favourite melty cheese

2 slices prosciutto

1 peach, sliced

1/4 cup fresh baby spinach

1 1/2 tablespoons mint pesto

1 tablespoons butter


Directions

1. Lay out a slice of bread and spread with the mint pesto. Add the slices of cheese, spinach, prosciutto and peaches, making sure to spread evenly. Top with the other slice of bread. Butter both sides of the sandwich lightly.

2. Heat a pan on the stove at medium heat and add the remaining butter. Lower temperature to medium-low and place sandwich in the center of the pan. Cover pan with a lid (this will help trap the heat and ensure the cheese melts). Cook on both sides for approximately 2-3 minutes, or until it browns lightly.
