Grilled Corn Salsa is such an easy, healthy recipe to make and a great make ahead dish that keeps well in the fridge! Great as an app served with tortilla chips or as a side dish!
Ingredients
3 ears corn, grilled and kernels cut off
1/2 red pepper, finely chopped
1/2 red onion, finely chopped
2 tablespoons cilantro, finely chopped
juice of 1 lime
1 tablespoon olive oil
salt and pepper to taste
Directions
Add all ingredients into a bowl and toss together. That's it!
