Grilled Vegetable Platter

Summer grilling season is upon us and this easy Grilled Vegetable Platter is a favourite in our home! Perfect for a family dinner or your next get-together, this colourful assortment of veggies looks beautiful and offers a variety of choices for everyone! Feel free to swap out the veggies for your favourites.




Serves 4-5 people


Ingredients

2 sweet potatoes

2 zucchinis

1 eggplant

2 lbs asparagus

3 tablespoons olive oil

1 tablespoon dry oregano

salt and pepper


Directions

Slice up vegetables. Brush with olive oil and sprinkle with oregano, salt and pepper. Grill on medium heat until cooked through and soft.
