Halloumi and Strawberry Salad with Strawberry Balsamic Vinaigrette

For the vinaigrette

6 strawberries, hulled

1/4 cup olive oil

2 tablespoons balsamic vinegar

2 tablespoons honey

salt and pepper to taste


For the salad

5 cups spring mix

1 cup strawberries, hulled and sliced

250 grams Halloumi, sliced

1 tablespoon olive oil

1/4 cup almond slices

1/4 cup hemp seeds


Directions

1. To make vinaigrette, Place all ingredients for the salad dressing in a blender or small food processor and pulse to combine. Set aside.

2. In a large salad bowl, add spring mix, strawberries, almond slices and hemp seeds. Drizzle on salad dressing and toss to coat evenly.

3. Lightly oil a grill pan or frying pan with olive oil and grill slices of halloumi using medium heat for about 1-2 minutes on each side or until the cheese begins to soften and develops nice grill marks. Top salad with warm halloumi and serve.
