Healthier Peanut Butter Cups

A healthier version of a classic favourite treat! These peanut butter cups use maple syrup as a sweetener and cocoa powder is used to make a dark chocolate coating. Enjoy this delicious treat without any guilt!





Ingredients

3/4 cups coconut oil, melted

1/2 cup cocoa powder

3 tablespoons maple syrup

1/2 teaspoon vanilla extract

1/2 cup peanut butter


Directions

1. Line a 12 cup muffin tin with cupcake liners.

2. In a bowl, combine coconut oil, cocoa powder, maple syrup and vanilla.

3. Pour a small amount of the chocolate mixture onto the bottom of each liner. Place in the fridge for a few minutes to set chocolate.

4. Add a 1/2 teaspoon of peanut butter to each muffin liner. Spread around with a spoon, careful not to go right up to the edge (leave some space for the chocolate to go around the edges).

5. Spoon the remaining chocolate on top of the peanut butter to cover. Place in fridge to set. Keep peanut butter cups in the refrigerator until ready to eat.
