You can feel good about serving these banana blueberry muffins to your family! Made without butter or sugar, using healthier ingredients and plenty of fresh fruit. These muffins come out fluffy and delicious!
Makes 12 muffins
Ingredients
2 eggs, whisked
2 bananas, mushed with a fork
1/4 cup coconut oil, melted
1/3 cup maple syrup
1/4 cup milk
1 teaspoon vanilla extract
1 teaspoon cinammon
1/4 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
2 cups flour (spelt, all purpose or whole wheat)
1 cup blueberries
Directions
1. Preheat oven to 350F and add muffin liners to a 12 cup muffin tin.
2. Mix eggs, bananas, coconut oil, maple syrup, milk, vanilla, cinnamon, salt, baking soda and baking powder together in a large bowl.
3. Add flour and stir together until well incorporated.
4. Add blueberries and gently fold into the mixture.
5. Bake for 22 minutes or until a toothpick inserted into the center of the muffin comes out clean.
6. Remove from oven and let cool in tin for 20 minutes. Gently remove muffins from tin and place on a cooling rack to cool completely.
