Healthy Blueberry Oat Pancakes

A yummy, healthy breakfast! Who doesn't love pancakes for breakfast?




Ingredients

3/4 cup oats

1 cup oat flour or regular flour

2 teaspoons baking powder

1/4 teaspoon salt

1/4 teaspoon cinnamon

2 eggs

1 cup milk or almond milk

3/4 cup blueberries


Directions

1. In a large bowl, mix oat, flour, baking powder, salt and cinnamon.

2. In a separate bowl, whisk 2 eggs with milk.

3. Add wet ingredients with the dry ingredients. Let sit for 5 minutes.

4. Heat a nonstick pan or griddle over medium heat. Pour 1/4 cup of batter for each pancake, cooking for about 2 minutes and then flipping over and cooking for another 2 minutes.
