Healthy Caesar Salad with Roasted Chickpea Croutons

We absolutely LOVE Caesar salad, and so finding a way to make this classic salad healthier so we could enjoy it more often was a definite must! The dressing is made with Greek Yogurt but tastes like the real deal!





Serves 5-6 people


Healthy Caesar Dressing


Ingredients

1/2 cup Greek Yogurt

2 tablespoons mayonnaise

1/4 cup lemon juice

1 clove garlic, minced

1/4 cup Parmesan cheese, grated

1 teaspoon Dijon mustard

1/2 teaspoon Worcestershire sauce

salt and pepper to taste


Directions

Whisk all ingredients together in a bowl until well combined.


 

Assemble the Salad


Ingredients

1 head Romaine lettuce, torn into bite sized pieces

1/2 cup Healthy Caesar Dressing (see recipe above)

1/2 cup roasted chickpeas


Directions

In a large bowl, toss lettuce with the dressing in order to coat evenly. Add the chickpea croutons and toss again.
