Healthy Dark Chocolate Pudding

This delicious, rich dark chocolate pudding is SO GOOD! Made without eggs or sugar, these little pots of heaven get their rich chocolatey flavour from dark chocolate and dates!



2 servings


Ingredients

12 pitted dates, roughly chopped

1 cup milk

1/4 cup cocoa powder

1/4 cup dark chocolate, chopped

1/2 teaspoon vanilla extract

1/8 teaspoon salt

1 tablespoons of maple syrup (optional)


Directions

1. Add all ingredients (except maple syrup) into a saucepan and simmer for 3-4 minutes. The dates will begin to breakdown, but not completely. Remove from heat and let cool for about 5 minutes.

2. Place pudding in a food processor and puree until smooth. Add the maple syrup during this step, if you prefer a sweeter pudding.

3. Spoon pudding into individual jars or bowls. Let cool to room temperature and then cover and place in refrigerator. The pudding will thicken as it cools.
