Healthy Parmesan Grilled Corn on the Cob is the perfect side dish for your summer barbecue! This recipe is so easy to make and definitely healthier than it looks as its made with thick, Greek yogurt! We'll be serving it all summer long!
Ingredients
4-5 ears of fresh corn
1 tablespoon olive oil
1/4 cup Greek Yogurt
2 tablespoons lemon juice
2 tablespoons Parmesan cheese, grated
1 teaspoon Dijon mustard
salt and pepper to taste
1 tablespoon parsley, chopped
Directions
1. Brush corn with olive oil and grill on medium heat for about 10 minutes, turning them.
2. Meanwhile, mix yogurt, lemon juice, parmesan cheese, mustard and salt and pepper in a bowl.
3. Remove corn from grill and brush the yogurt mixture on top. Sprinkle with fresh parsley and serve.
