It's no secret i'm more than a little obsessed with pumpkin! Savoury and sweet pumpkin recipes have been on regular rotation in our house for quite some time. These healthy muffins are hits with everyone. They're made with healthy ingredients and easy to make! Best of all, you can mix everything in one bowl, making clean up a breeze!
Makes 12 muffins
Ingredients
1 cup pumpkin puree
2 eggs
1/4 cup honey
1/3 cup brown sugar
1/2 cup coconut oil or butter, melted
1/4 cup milk
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons pumpkin spice
1/2 teaspoon salt
1 2/3 cup flour
1 1/4 cup chocolate chunks, divided
2 tablespoons pumpkin seeds
Directions
1. Preheat oven to 325F and line a 12 cup muffin pan with liners.
2. In a large bowl, mix pumpkin puree, eggs, honey, brown sugar, coconut oil or butter, milk, and vanilla extract until well combined. Stir in baking powder, baking soda, pumpkin spice and salt. Slowly add the flour, stirring until thick batter forms. Add 1 cup of chocolate chunks and mix.
3. Scoop batter into the muffin pan. Top with remaining 1/4 cup chocolate chunks and pumpkin seeds. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
