Made with a lightened up dressing made with Greek yogurt, its probably the healthiest version of a Caesar salad I've had and tastes amazing!
Ingredients
For the Healthy Caesar Dressing:
1/2 cup Greek Yogurt
2 tablespoons mayonnaise
1/4 cup lemon juice
1 clove garlic, minced (optional)
1/4 cup Parmesan cheese, grated
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire Sauce
salt and pepper to taste
For the Salad:
4 cups kale
2 teaspoons lemon juice
Roasted delicata squash (see recipe below)
parmesan cheese (as much as desired)
Directions
1. Make the dressing by whisking all ingredients together in a bowl until well combined.
2. Place kale in a bowl and add lemon juice. Gently massage the lemon juice into the kale for a few minutes to soften the leaves.
3. Chop the kale and add to a bowl. Drizzle with salad dressing and toss to combine. Add the delicata squash and sprinkle with additional parmesan cheese.
Roasted Delicata Squash
Ingredients
2 delicata squash
2 tablespoons olive oil
1 teaspoon onion powder
salt and pepper
Directions
1. Preheat oven to 450F and line 2 baking sheets with parchment paper.
2. Cut squash in half lengthwise and spoon on the seeds. Slice the squash into 1/4 inch wedges and arrange on baking trays.
3. Drizzle with olive oil and sprinkle with onion powder, salt and pepper. Roast in the oven until tender, approximately 25 minutes.
