Maple Balsamic Glazed Roasted Carrots are an easy and flavourful way to serve up your carrots! These make an excellent side dish for your dinner and are impressive enough to serve for special dinner occasions! Thinking these are going to be making an appearance at our Thanksgiving dinner!
Ingredients
2 pounds carrots, peeled and sliced in half (if any carrots are very large, you may wish to cut them into quarters)
3 tablespoons balsamic vinegar
3 tablespoons maple syrup
1 tablespoon olive oil
salt and pepper
Directions
1. Preheat oven to 375F and line a baking sheet with parchment paper.
2. Peel and slice your carrots to the desired size. I like to slice them in half (or quarters if they are especially large).
3. Mix the balsamic vinegar, maple syrup and olive oil in a bowl to create . Toss the carrots in the glaze. Reserve the rest of the glaze to brush on halfway through the cooking process.
4. Arrange the carrots on the baking sheet and season with salt and pepper. Roast in the oven for 15 minutes. Take out and brush with the glaze and then return to the oven to roast for another 15 minutes or until the carrots are fork tender.
