Mediterranean Flatbread with Whipped Feta

So good! This flatbread did not take long to put together and makes for a delicious and impressive flatbread!



Ingredients

2 tablespoon olive oil

1 cup cherry tomatoes

salt and pepper

2 cups spinach, roughly chopped

1 store-bought flatbread

2 cups mozzarella cheese, grated

1/4 cup whipped feta

1 tablespoon fresh basil, finely chopped (or 1/3 teaspoon dried)

1 tablespoon fresh oregano (or 1/3 teaspoon dried)


Directions

1. Preheat oven to 400F. Place flatbread on a baking sheet and spread on mozzarella cheese evenly.

2. Warm 1 tablespoon of olive oil in a saute pan on medium heat. Add tomatoes and cook until soft and they begin to blister, about 4 minutes. Remove from pan and set aside. Wipe down pan.

3. In the same pan, add 1 tablespoon olive oil and the spinach. Saute for 1 minute until it begins to wilt.

3. Spread the spinach and tomatoes onto the flatbread. Add dollops of whipped feta onto the flatbread. Sprinkle with fresh herbs. Bake in oven for 13-15 minutes, until the cheese begins to bubble and crust turns a nice golden brown.
