These fruity, buttery Peach Crumble Bars are a mouthwatering summer treat! Peaches are at their peak right now and there is nothing like this delicious fruit-filled dessert to celebrate them in all their glory!
Ingredients
Oatmeal Crust
1/3 cup cold butter
1/3 cup coconut oil
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 cup flour
1 cup oats
1/4 teaspoon cinnamon
Filling
5 peaches, sliced thinly
1/2 cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1/4 teaspoon cinnamon
sugar and cinnamon to sprinkle on top
Directions
1. Preheat oven to 350F and line a 9x9 pan with parchment paper.
2. In a large bowl, add all the filling ingredients and mix together. Set aside.
3. In the bowl of a stand mixer, add the butter, coconut oil, and sugar and mix until well blended and fluffy. Add the eggs and vanilla and mix to combine. Add the remaining ingredients and mix until they are combined.
4. Spread half of the oatmeal mixture onto the bottom of the 9x9 pan. Top with the filling, making sure to spread it evenly in pan. Top with the remaining oatmeal mixture, doing your best to cover as much of the peaches as you can. It is okay if a few peaches are still poking through. Sprinkle with some sugar and cinnamon and bake in the oven for approximately 30 minutes or until it begins to turn a light golden-brown.
5. Remove from oven and let stand for 5 minutes to cool. Transfer to a cooling rack to cool completely. Once cooled, cut into squares.
