Chocolate chip cookies are given a Fall makeover with the addition of pumpkin! These cookies come together in one bowl, making clean up a breeze!
Ingredients
1/2 cup butter, melted
3/4 cup brown sugar
1 large egg
1/3 cup pureed pumpkin
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
3/4 teaspoon baking soda
1 1/2 cup flour
1 cup chocolate chips
Directions
1. Stir melted butter and brown sugar in a bowl until combined. Add the egg, pureed pumpkin, vanilla, pumpkin pie spice and salt, stirring to combine.
2. Add the baking soda and flour and combine everything. Finally, add the chocolate chips.
3. Place the cookie dough in the fridge for approximately an hour.
4. Preheat oven to 350F and line 2 baking sheets with parchment paper.
Once the dough is chilled, roll it out into balls and bake for approximately 9-13 minutes or until lightly browned on the bottom.
