Quick Chicken Stir fry with Honey-Sesame Sauce

2 chicken breasts, cut into 1 inch cubes and cooked

1 red pepper, chopped

1 green pepper, chopped

1/2 red onion, chopped

1 cup snap peas

3/4 cup soy sauce

3/4 cup honey

2 tablespoons sesame oil

1/3 cup rice vinegar

1/2 teaspoon ground ginger

1/4 teaspoon pepper

1 cup water

2 tablespoons cornstarch

2 tablespoons sesame seeds

1 green onion, chopped finely


1. In a bowl, mix soy sauce, honey, rice vinegar, ginger, and pepper together to create a sauce. Set aside. In a separate cup, add water and cornstarch and stir to create a slurry.

2. In a large saute pan, add sesame oil and saute vegetables for a few minutes until they begin to soften but still have some crunch left in them.

3. Add cooked chicken and the sauce mixture into it and stir. Add this to the pan and stir. The sauce in the pan will begin to thicken. When the sauce is thick, remove from heat. Serve over rice.
