Roasted Parmesan Acorn Squash

How pretty is this Roasted Parmesan Acorn Squash dish? I love squash of all kinds but acorn squash might be my favourite! Pretty slices of squash are seasoned with Parmesan cheese and baked until tender. They make a healthy, flavourful side and are easy to do!





Ingredients

1 acorn squash

3 tablespoons olive oil

1/3 cup Parmesan cheese

1/2 teaspoon onion powder

salt and pepper


Directions

1. Preheat oven to 400F and line a sheet pan with parchment paper.

2. Cut the squash in half and scoop out the seeds with a spoon. Slice each half into slices.

3. Lay squash slices onto the sheet pan and brush with olive oil. Sprinkle with onion powder, salt, pepper and Parmesan cheese. Flip over and repeat this on the other side.

4. Bake for 20-25 minutes or until squash is tender. Sprinkle with a little more Parmesan cheese before serving, if desired.
