Salmon Cakes

2 cups cooked salmon (or canned)
1/2 red pepper, diced
1 green onions, chopped
1 cup breadcrumbs
2 large eggs
2 tablespoons mayonnaise
2 tablespoons parsley, minced
1 teaspoon mustard
2 tablespoons lemon zest
1 teaspoon salt
1/2 teaspoon pepper
olive oil for frying
Mix all ingredients in a large bowl. Form into patties. Fry on medium-low heat until nicely browned on both sides. Serve with lemon slices.
