Sesame Peanut Noodle Bowl

Fresh veggies and noodles are tossed in a delicious sesame peanut sauce to make a seriously addictive dish! This Sesame Peanut Noodle Bowl comes together in less than 20 minutes! These noodles are great served warm or cold!



Ingredients

250g long noodle pasta (spaghetti, linguine, rice noodles)

1 zucchini, spiralized

1 cup carrots, thinly sliced or shredded

1 red pepper, thinly sliced

3 green onions, chopped

1 tablespoon sesame oil

1/4 cup creamy peanut butter

juice of half a lime

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1/4 teaspoon ground ginger

1 teaspoon sriracha (more if you like spice)

1/4 cup chopped peanuts

1 tablespoon sesame seeds

lime wedges, for serving


Directions

1. Bring a pot of salted water to a boil and cook spaghetti according to package directions. Drain.

2. Meanwhile, mix sesame oil, peanut butter, soy sauce, honey, rice vinegar and sriracha in a bowl to create the sauce.

3. Add spaghetti, carrots, peppers and zucchini in a large pot and add sauce. Add peanuts. Mix on low heat to combine. Serve with additional green onions and sesame seeds for garnish. Serve with lime wedges.
