Fresh pesto is so easy to make and tastes absolutely incredible on everything! This pesto uses fresh spinach in addition to basil and is downright delicious in this pasta dish! A super easy and fast weeknight dinner.
Ingredients
5 cups spinach, divided
1 cup basil
1/3 cup pine nuts
1/4 cup parmesan
3/4 teaspoon salt
1 garlic clove
juice of 1 lemon
1/4 cup olive oil
400g of your favourite pasta
1 cup cherry tomatoes, halved
salt, to taste
Directions
1. Bring a large pot of salted water to boil. Add pasta and cook according to package directions. Drain.
2. Meanwhile, in your food processor, add 3 cups of spinach, the basil, pine nuts, garlic, parmesan, salt and lemon juice. Pulse until it resembles a coarse meal. With the processor running, slowly begin to drizzle in olive oil.
3. Add drained pasta back into pot and add the pesto. Add 2 cups of chopped spinach and the cherry tomatoes and toss together to combine.
