Fresh vegetables and a light, Greek yogurt dressing make this salad the perfect summer salad!
Makes 2 larger salads or 4 side salads
Ingredients
For the salad:
4 cups spring mix
2 radishes, sliced thinly
2 large tomatoes, chopped
3 tablespoons hemp seeds
1/4 cup feta, crumbled
2 chicken souvlakia
For the dressing:
3/4 cup plain Greek yogurt
juice of 1/2 a lemon
1 tablespoon fresh dill, chopped
salt and pepper
Directions
1. Add all salad ingredients in a large bowl.
2. In a small bowl, combine the dressing ingredients and whisk together until well combined.
3. Drizzle dressing on salad and serve.
