Thai Chicken Satay with Peanut Sauce

These flavourful skewers are perfect for summer barbecues or weeknight meals alike! The creamy peanut sauce is so easy to put together and makes a delicious sauce for dipping!





Makes 4-5 servings


Ingredients


For the skewers:

1.5 lb chicken thighs, chopped into bite size pieces

3 tablespoons soy sauce

3 tablespoons sesame oil

2 teaspoons honey

1/2 tsp chili flakes


For the peanut sauce:

1 teaspoon sesame oil

1/4 cup peanut butter

1 teaspoon honey

1 teaspoon soy sauce

1/3 cup coconut milk

1/2 tablespoon rice vinegar


To serve:

1 tablespoons cilantro, chopped

1 thai chili pepper, seeded and finely chopped (optional)

1 tablespoon chopped peanuts


Directions

1. In a large platter or ziplock bag, mix soy sauce, sesame oil, honey and chili flakes. Add chicken and mix to coat evenly. Marinate in fridge for at least 2 hours or overnight.

2. Soak skewers in water for 15 minutes. Carefully thread chicken onto the skewers. Grill on medium heat until cooked through, turning halfway through cooking.

3. To make sauce, at all ingredients in a saucepan and stir over medium heat for 2-3 minutes.

4. To serve, sprinkle chicken with chopped peanuts, cilantro and chili peppers (if you want to add heat).
