This delicious salad, packed with fresh spinach and tomatoes is taken to the next level with fried goat cheese! So. Much. Yum!
Ingredients
For the fried goat cheese
200g goat cheese
1/4 cup breadcrumbs
1/4 cup panko bread crumbs
1/2 teaspoon oregano
salt and pepper
1 egg
vegetable oil for frying
For the salad
5 cups spinach
2 tomatoes, chopped into bite size pieces
2 tablespoons sliced marinated onions (or fresh onions)*
1-2 tablespoons crumbled goat cheese (optional)
Dressing
1/4 cup olive oil
2 tablespoons vinegar
1/2 teaspoon dried oregano
salt and pepper
Directions
1. In a bowl, add breadcrumbs, panko breadcrumbs, oregano, salt and pepper. Stir to combine. In a separate bowl, add the egg and whisk.
2. Slice goat cheese into medallions. Dip into the egg and then into the breadcrumb mixture. Fry until golden brown, flipping to ensure both sides are cooked.
3. In a jar with a secure lid add all the dressing ingredients and shake to combine.
4. In a large salad bowl, add the spinach, tomatoes and marinated onions. Add the dressing and toss to combine everything. Top with the fried goat cheese and additional crumbled goat cheese (optional).
*To marinate onions, slice an onion and place in a small bowl with enough olive oil to cover it. Add 1/2 teaspoon dried oregano and let sit for at least 2 hours. Marinated onions can be made a day in advance. Just cover bowl with plastic wrap and leave out at room temperature.
