These healthier cookies are full of chocolate flavour to satisfy your sweet tooth but made with healthier ingredients so you can feel good about eating them! Made with coconut oil, oats, cocoa powder, maple syrup and zucchini so you can feel good about eating this delicious treat!
Makes about 18 cookies
Ingredients
3/4 cup +2 tablespoons flour
1 teaspoon baking soda
3/4 cup oats
1/2 zucchini, shredded
2 tablespoons hemp hearts
1/4 teaspoon salt
1 egg
1/2 cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon vanilla
1/4 cup dark chocolate chips
1/4 cup white chocolate chips
Directions
1. Preheat oven to 350 and line 2 baking sheets with parchment paper. Grate zucchini. Place in a cheese cloth or paper towel and ring out as much water as possible.
2. In a large bowl, mix the flour, baking soda, oats, zucchini, hemp hearts and salt.
3. In a separate bowl, mix eggs, maple syrup, coconut oil, and vanilla.
4. Mix the wet ingredients with the dry ingredients. Stir in chocolate chips.
5. Using a cookie scoop, evenly space 9 scoops on each baking sheet. Bake for 12 minutes.
