These healthy fudgsicles are sugar-free and dairy-free! Made with coconut milk and naturally sweetened with dates, you can enjoy a rich treat that's good for you!
Makes 5 fudgsicles
Ingredients
1 500 ml can coconut milk
9 pitted dates
1/2 cup peanut butter
5 tablespoons cocoa powder
1/2 teaspoon vanilla extract
Directions
1. Add all ingredients in a saucepan and whisk together over medium heat until the peanut butter begins to melt and everything is combined. Let cool for several minutes.
2. When it is cooled enough, transfer to a food processor and process together until it has a smooth consistency.
3. Pour into popsicle molds and freeze.
Note: You can enjoy this recipe as is or if you'd like, drizzle melted chocolate and top with crushed peanuts!
