We are obsessed with zucchini in our house so naturally, we looked for ways to incorporate it into breakfast! These savoury pancakes are delicious and make a great healthy start to your day!
Makes about 8-10 pancakes
Ingredients
3/4 cup oats
1 cup oat flour or regular flour
2 teaspoons baking powder
2 eggs
1 cup milk or almond milk
1 small zucchini, shredded and water squeezed out
salt and pepper
Directions
1. In a large bowl, mix oat, flour, baking powder, salt and pepper. Add zucchini and mix together.
2. In a separate bowl, whisk 2 eggs with milk.
3. Add wet ingredients with the dry ingredients and mix to incorporate. Let sit for 5 minutes.
4. Heat a nonstick pan or griddle over medium heat. Pour 1/4 cup of batter for each pancake, cooking for about 2 minutes and then flipping over and cooking for another 2 minutes.
